Sauce Ingredients:
2 sweet potatoes, chopped
2 cups cooked tomato puree
1/4 cooking cream
1/4 cup butter
1/4 cup Berbere Seasoning
• Start by preheating the oven to 350°F.
• Toss sweet potatoes with olive oil until fully coated. Roast them in the oven until fully cooked and soft. Add the tomato puree and sweet potatoes to a blender and puree.
• Add puree to a pre-heated deep pan, flavour with Berbere seasoning, and let simmer for about 5 minutes, stirring often.
• Reduce temperature and add butter and cooking cream.
• Let simmer further until a creamy textured sauce is achieved.
Dish Ingredients:
6-8 oz white fish (tilapia, halibut, or sea bass)
1/4 cup olive oil
1/8 cup lemon juice
4 cups Berbere sauce
1/4 cup Berbere seasoning
• Preheat the oven to 350°F.
• Marinate fish fillet with Berbere seasoning and olive oil.
• Place fillet on a roasting pan skin side down. Roast for 10-15 minutes.
• Remove from pan and add fish to Berbere sauce.
• Let simmer for another 5 minutes on low, allowing for sauce and flavour to infuse.
• Garnish with your favourite fresh herb.
